PREPARATION: 30 minutes – makes about 4 servings

EQUIPMENT: Shallow mixing bowl, 3-quart saucepan, Slotted Spoon

INGREDIENTS:

  • ·       1 pound shrimp peeled and deveined tail left on
  • ·       1 cup cornstarch
  • ·       1 all-purpose flour
  • ·       1 teaspoon Old Bay seasoning
  • ·       1 egg well beaten
  • ·       ½ cup or more Sprite of club soda
  • ·       1 to 1½ pounds lard or 12 to 16 ounce’s olive oil

EQUIPMENT: Shallow mixing bowl, 3-quart saucepan, pierced serving spoon

To prepare the batter. In the mixing bowl combine the cornstarch, flour, and Old Bay seasoning and mix well. Add the well beaten egg and using a fork whisk into the batter. Slowly add the Sprite and continue to mix with a whisk until batter is thick and smooth.

To prepare the oil for deep frying. While you are preparing the batter, put the lard in the saucepan and place the burner at 375ºF. NOTE: for the best results use an induction pan and burner with a temperature readout. Or you can use a pan with an oil thermometer.

Using the tail as a handle roll the shrimp in the batter and drop into hot oil.

How Long to Fry Shrimp

At a temperature of 375°F, the shrimp will be cooked in about 4 to 5 minutes. If the temp dips closer to 350°F, you may need to leave the shrimp slightly longer. Fry until crispy and golden brown color. Place it on a brown paper bag or paper towel to absorb excess oil. Serve while hot.
