TORTA DI MELE IN PADELLA

In Italian Torta translated equals Cake, Mele is Apples, and Padella is Pan. Italian Upside-Down Apple Cake in a pan is a fast and easy recipe that can be made using apples, butter, brown sugar, and any brand of yellow cake mix. I like to use Jiffy Yellow Cake Mix for its convenience and consistency, and it measures out perfectly for my Ultra-Tech II 9-inch gourmet skillet.

EQUIPMENT: 2 stainless steel mixing bowls, Rotary Mandolin Food Cutter and #2 cutting cone, electric mixer, 9-inch Gourmet Skillet with Glass Lid.

YELLOW CAKE MIX – Jiffy 9-ounce box, 1 whole egg, ½-cup filtered or purified water (DO NOT US Chlorinated Tap Water).

 

HOMEMADE CAKE MIX RECIPE:

  • ·       2 eggs
  • ·       ½ cup sugar
  • ·       1 teaspoon cinnamon
  • ·       ½ teaspoon ginger
  • ·       ¼ cup vegetable oil
  • ·       ½ cup milk
  • ·       ½ cup sour cream
  • ·       1 teaspoon vanilla extract
  • ·       1½ cups all-purpose flour
  • ·       1 tsp baking powder
  • ·       1 Braeburn or Granny Smith apple, peeled, cored, and grated #2 cutting cone

APPLE FILLING

  • ·       1 tablespoon butter
  • ·       1 tablespoon brown sugar
  • ·       1 Braeburn or Granny Smith apple, peeled, cored, and cut into 8 to 10 slices
  • ·       ½ teaspoon cinnamon.

Using an electric mixer on medium speed, in a large mixing bowl, beat eggs, sugar, cinnamon, and ginger together until smooth. Continue mixing while slowly adding the vegetable oil, then vanilla extract, milk, and finally sour cream. Continue mixing until thoroughly combined.

Add the flour and baking powder and continue mixing until smooth. Using a spatula or spoon, stir the grated apple into the batter by hand.

Grease your 9-inch gourmet skillet with butter and sprinkle with brown sugar. Place the apples on top of the brown sugar as shown and sprinkle with cinnamon.

Pour batter over the apples, cover and cook on low heat 200ᵒF to 225ᵒF for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.

Serve with ice cream or homemade gelato.
