🎃 Momma’s Incredible Pumpkin Cheesecake
An American Classic with Native Roots and Family Warmth
🌽 Historical Origins
1. Indigenous Roots
Pumpkins (Cucurbita pepo) have been cultivated in Central and South America for more than 7,500 years, making them one of the oldest domesticated crops in the Western Hemisphere. Native Americans relied on pumpkins and other squashes for food, medicine, and even storage vessels. The flesh was roasted or steamed, the seeds were eaten for protein, and the dried shells were used as bowls or containers.
2. Colonial Adaptation
European settlers arriving in the 1600s quickly embraced pumpkin as a local substitute for the grains, fruits, and gourds of their homeland. Early American colonists created “pumpkin pies” by hollowing out the fruit, filling it with milk, honey, and spices, and baking it directly in the hearth embers.
3. 19th–20th Century Evolution
By the 1800s, pumpkin desserts had become a fixture in American cookbooks. With the invention of cream cheese (by William Lawrence in 1872) and the growing popularity of custard-style pies, the idea of combining pumpkin with cheesecake emerged naturally. By the mid-20th century, “Pumpkin Cheesecake” became a seasonal favorite, uniting the creamy richness of New York-style cheesecake with the spiced nostalgia of pumpkin pie — a true marriage of old and new worlds.
🍰 Recipe: Momma’s Incredible Pumpkin Cheesecake
Preparation Time: 1 hour 20 minutes
Servings: 8 to 10
Equipment:
- 3-quart saucepan with lid
- 12×10-inch Baking Lasagna Pan or leak-proof springform pan
- Rotary Mandoline Food Cutter
- Large mixing bowl
- Measuring cups and spoons
- Whisk or electric hand blender
🥧 CRUST
- ⅔ cup graham crackers, grated #1 cutting cone
- 1 Tbsp powdered sugar, sifted
- 1 Tbsp fresh lemon zest, grated #1 cutting cone
- 2 Tbsp unsalted butter, softened
Instructions:
In a small mixing bowl, combine graham crackers, sugar, and lemon zest with butter. Mix until crumbly and well blended. Press into the bottom and sides of the springform pan. Bake at 350°F (177°C) for 5–7 minutes; set aside to cool.
🎃 PUMPKIN CHEESECAKE FILLING
- 1 cup granulated sugar
- 6 eggs, at room temperature
- ½ cup Coco López (cream of coconut)
- 12 oz evaporated milk (1 can)
- 14 oz sweetened condensed milk (1 can)
- 16 oz cream cheese (2 packages), softened
- 1½–2 cups fresh pumpkin purée (cooked the waterless way)
- 1 tsp each: cinnamon, nutmeg, ginger, and allspice
👩🍳 Cooking the Pumpkin — The Waterless Way
- Slice pumpkin into 2–2½" strips.
- Using the Rotary Mandoline Food Cutter, grate on the #1 cone (skin side facing the back of the hopper).
- Place grated pumpkin in a 3-quart waterless saucepan. Rinse lightly with purified water and pour off excess — the moisture clinging to the pumpkin is sufficient.
- Cover and cook over medium heat (275°F) with the vent open. When steam escapes or the whistle sounds, close the vent and reduce heat to low (200°F). Cook 20–25 minutes until tender.
- Do not remove the cover during cooking to prevent loss of vapor seal and scorching.
- When done, mash lightly and cool.
A medium to large pumpkin yields 5–8 cups of purée. Store in airtight glass or Ultra-Vac containers until ready to use.
🧀 FILLING ASSEMBLY
- Preheat oven to 350°F (177°C). Place a baking pan half-filled with hot water on the center rack to create a gentle water bath.
- In a large mixing bowl, whisk the eggs until frothy.
- Add sugar, Coco López, evaporated milk, condensed milk, cream cheese, pumpkin purée, and spices. Whisk or blend until smooth, but do not overbeat.
- Pour filling into the cooled crust. If using a springform pan that may leak, wrap the bottom and sides with plastic wrap and foil before placing it into the water bath.
- Bake for 1 hour, or until a toothpick inserted in the center comes out clean.
🍂 Momma’s Secret for a Perfect Finish
When baking is complete, turn off the oven and crack the door open slightly. Allow the cheesecake to cool inside the oven for about 1 hour. This gradual cooling prevents cracking and ensures a creamy, uniform texture.
Remove from the oven, cool 30 minutes at room temperature, then refrigerate until chilled and set.
🍽️ To Serve
Run a thin knife between the crust and the pan edge before unlatching.
Garnish each slice with:
- Fresh whipped cream
- A sprinkle of cinnamon or nutmeg
- Fresh mint leaves or candied pecans
