Peanut Butter Cookies - Best You Ever Had!

Peanut butter cookies have a fascinating history that spans over a century. These classic cookies have been a beloved treat for generations, and their story is as rich as their flavor. The first known peanut butter cookie recipe was published in a cookbook in the early 1900s, and since then, these cookies have become a staple in American households.

During World War I and II, peanut butter cookies became a popular treat mailed to soldiers serving overseas. They were easy to make and transport and provided a taste of home for those who were far away from their loved ones.

Peanut butter was first invented as a protein-rich food for people who could not afford meat, and cookies made with peanut butter were seen as a nutritious snack. Over time, however, the popularity of peanut butter cookies grew, and they became a beloved indulgence rather than a health food.

Today, there are countless variations of peanut butter cookie recipes, from classic recipes that have been passed down for generations to modern twists on the traditional cookie. Whether you prefer your peanut butter cookies soft and chewy or crispy and crunchy, there is a recipe out there to suit your tastes.

Growing up in my old neighborhood in Rahway, NJ was a treat. My neighbor Marie Zawislak was the best of the best when it came to baked goods. This is my recollection and rendition of her excellent Peanut Butter Cookies.

EQUIPMENT: 2 or 3 stainless steel cookie sheets, small and medium-sized mixing bowls.

PREPARATION TIME: 45 minutes – makes 3 dozen cookies.

Wet ingredients

  • ½ cup of unsalted softened butter
  • 1 ½ cups chunky peanut butter (or creamy)
  • 1 teaspoon vanilla extract
  • 2 whole eggs (room temperature)

Dry ingredients

  • 1 ½ cups brown sugar
  • 2 ¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda

PREPARATION:

Preheat oven to 350°F (180°C). Cover the baking sheets with parchment paper.

Wet ingredients: In the small mixing bowl combine the butter, peanut butter, vanilla extract, and eggs. Mix well to form a slurry.

Dry Ingredients: In the larger mixing bowl combine the brown sugar, flour, baking soda, and baking powder. Mix well.

Combine the ingredients: Add the wet ingredients to the dry ingredients. Using a wooden spoon stir and fold until the wet and dry ingredients are fully combined.

Using a tablespoon measure equal amounts of dough and form into a ball and place the dough ball on the baking sheet with parchment paper. Press down each ball with a fork one way and then the other.

Sprinkle with sugar if desired. Bake for 15 to 20 minutes or until slightly brown on top. Remove from the oven and allow to cool before serving.
