Easy One-Egg Cake

Preparation Time: 30 minutes
Equipment: Medium Sauté Skillet
- Unsalted butter or non-stick cooking spray
- 1¼ cups un-sifted all-purpose flour
- ¼ cup sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ¼ cup shortening
- 2/3 cup (160 ml) skim milk
- 1 egg
- 1 teaspoon vanilla
Butter generously the Medium Sauté Skillet. In a large Mixing Bowl, combine flour, sugar, baking powder, salt, shortening and milk. Blend well with an electric mixer at low speed, about 1 minute. Increase to medium speed, and add egg and vanilla, mix about 2 minutes. Allow batter to set for 10-15 minutes before cooking.
Pour batter into Skillet, cover (vent closed), and cook on low heat for 18-20 minutes. Invert cake onto plate, frost by placing a chocolate candy bar on top to melt, spread with a butter knife of spatula.
