PREPARATION: 1 hour – 4 servings

EQUIPMENT: French chef knife, Cutting Board, Large Sauté Skillet, Rotary Mandolin Food Cutter

INGREDIENTS:

  • 1-pound Italian sausage (5 links Johnsonville)
  • 1 large onion peeled and sliced.
  • ½ bulb garlic peeled and chopped
  • 1 tablespoon oregano
  • 24-ounce jar or can roasted red peppers packed in water
  • fresh basil leaves, as many as you want
  • Hot pepper seeds optional
  • ½ cup freshly grated parmesan cheese
  • Italian hot dog rolls optional

DIRECTIONS:

To make a delicious sausage dish with a flavorful sauce, preheat a large sauté skillet over medium heat to 275F and add the sausage to the pan. Use no oil or butter. Continue to turn and brown the sausage on all sides, which should take about 10 to 12 minutes. As you brown the sausage, a brown fond will form on the cooking surface of the pan, which will in part create the sauce.

Once the sausage is browned, add onions and garlic to the pan. Cover the pan and open the vent to let steam escape. Reduce the heat to low heat around 200ᵒF and let the sausage, onions, and garlic cook until they are tender and flavorful. About 15 minutes.

Add the roasted peppers and liquid, the oregano - cover the skillet, and cook for 20 to 25 minutes until the roasted pepper dissolves into a sauce. Top with basil leaves and cook another 5 to 10 minutes to enhance the flavor.

To serve, top with grated parmesan cheese. Also, you can serve with pasta if you like, or on an Italian Hot Dog Roll.
