PASTA PUTTANESCA for Two

Pasta Puttanesca is more than just a delicious dish; it's a captivating story woven into the vibrant tapestry of Italian culinary tradition passed down through generations. Pasta Puttánesca originated from the bustling streets of Naples in the mid-20th century, this iconic pasta dish was said to have been created by local ladies of the night, who needed a quick, flavorful meal between their appointments. The name puttanesca itself is derived from the Italian word for prostitute, reflecting the dish's intriguing past. With its bold flavors drawn from simple, quality ingredients like tomatoes, garlic, olives, capers, and anchovies, Pasta Puttanesca embodies the spirit of Italian cooking: resourceful, authentic, and bursting with flavor.

Although I enjoyed this recipe growing up I don’t recall anyone in the family providing the origin and history of Putanesca. LOL enjoy!

PREPARATION: 10 minutes – makes 2 servings

EQUIPMENT:Medium Sauté Pan

INGREDIENTS:

  • ·       1 tablespoon olive oil
  • ·       1 tablespoon unsalted butter
  • ·       2 tablespoons minced crushed garlic
  • ·       2 tablespoons chopped green onions
  • ·       2 tablespoons slice Calamata olives
  • ·       2 tablespoons chopped anchovies
  • ·       ½ cup white wine Pinot Grigio or Sauvignon Blanc
  • ·       1½ cups spaghetti sauce
  • ·       Rine of parmesan cheese
  • ·       2 cups pasta cooked aldente
  • ·       2 tablespoons chopped fresh basil

DIRECTIONS:

In the 11-inch Gourmet Skillet sauté the garlic, green onions, Calamata olives, and anchovies over medium heat 275 – 300ᵒF for about 3 to 4 minutes. Sitting, add the wine ignite it with a stick lighter, and sauté 2 to 3 minutes to cook off the alcohol.

Add the spaghetti sauce and cheese, bring to temperature stirring 2 to 3 minutes. Add the pasta and bring to temperature for about 2 minutes.

To serve, swirl the pasta onto a serving plate, and top with fresh basil.
