Fresh summer peaches are gently cooked the waterless way in the Ultra-Tech II 3-Quart Saucepan. When the Ultra-Temp™ whistle sounds, close the vent and reduce the heat to low. The peaches cook gently in their own natural moisture, creating tender fruit and wonderfully concentrated peach juices.
The cooled peaches are layered with vanilla wafers and a rich peaches-and-cream filling in two 9 × 5-inch stainless steel loaf pans. An overnight chill transforms everything into a cool, creamy, sliceable summer dessert.

Ingredients
Waterless Peaches
- 5 medium-to-large ripe but firm fresh peaches
- 4–5 teaspoons purified water
- 1 tablespoon brown sugar
- ½ teaspoon pure vanilla extract
- ¼ teaspoon ground cinnamon, optional
- Small pinch of salt
Cream Filling
- 8 oz cream cheese, softened
- ⅓ cup powdered sugar
- 1 teaspoon pure vanilla extract
- 2 cups cold heavy whipping cream
Cake Layers
- 1 box vanilla wafers, approximately 11–12 oz
Garnish
- Fresh peach slices
- Fresh whipped cream
- Crushed vanilla wafers

Place the Ultra-Temp™ Whistle Valve lid on the saucepan with the vent open.
