Silver Queen Corn is famous for its creamy-white kernels, delicate sweetness and tender texture. And when it comes to outstanding summer sweet corn, New Jersey has long been famous for exceptional farm-fresh corn sold at local farm stands, farmers markets and roadside produce stands throughout the summer.

When you start with great fresh corn, don't boil away the flavor.

The Health Craft Waterless Cooking method uses very little added water. Instead, the natural moisture in the corn and fresh husks creates steam inside the sealed cookware.

Why Cook Silver Queen Corn the Waterless Way?

Easy Waterless Silver Queen Corn on the Cob Recipe

Preparation & Cooking Time: Approximately 25 minutes
Servings: 4
Cooking Method: Waterless Cooking
Difficulty: Easy

Equipment

  •  6-Quart Stockpot with Ultra-Temp® Lid
  • Chef's Knife

Ingredients

  • 4 ears fresh Silver Queen Corn, with husks
  • Unsalted butter, optional
  • Kosher salt, optional

How to Cook Silver Queen Corn on the Cob Without Boiling

1. Prepare the Corn

Remove the husks and silk from each ear of Silver Queen Corn.

Save 6–8 clean inner husks.

These fresh husks will be used to line the bottom of the cookware and provide additional natural moisture during cooking.

2. Line the Stockpot with Corn Husks

Place the clean corn husks across the bottom of your Health Craft 5-Quart Stockpot.

The husks help provide moisture while creating a natural barrier between the corn and the bottom of the cookware, helping protect the corn's natural sugars from scorching.

3. Add the Silver Queen Corn

Arrange the ears of corn on top of the husks.

If whole ears don't fit comfortably in the cookware, simply cut them in half.

For picnics, BBQs and Labor Day parties, you can also cut the ears into smaller serving-size sections.

4. Add Just a Little Moisture

Rinse the corn with filtered water and pour off the excess.

Do not fill the cookware with water and do not submerge the corn.

The moisture clinging to the corn and fresh husks provides the small amount of additional moisture needed for Waterless Cooking.

5. Cover and Heat

Cover the stockpot with the Ultra-Temp® Lid.

Open the control and whistle valve.

Cook over medium heat (240–270°F / 116–132°C) until the whistle sounds.

6. Create the Ultra-Seal®

When the whistle sounds, close the Ultra-Temp® control and whistle valve.

Once the Ultra-Seal® forms, reduce the heat to:

Low: 150–174°F / 66–79°C

7. Cook for 15–20 Minutes

Continue cooking the Silver Queen Corn over low heat for approximately 15–20 minutes.

Do not lift the lid during cooking.

Opening the lid releases steam and breaks the Ultra-Seal®, which can increase cooking time and reduce cooking efficiency.

8. Check for Doneness

The Silver Queen Corn should be hot, tender and juicy.

If additional cooking is necessary, add approximately 2 tablespoons of filtered water around the inside edge of the cookware, replace the lid, reform the seal and continue cooking for another 5–10 minutes over low heat.

Serve immediately.

Fresh Silver Queen Corn needs very little added flavor. A small amount of unsalted butter and a light sprinkle of kosher salt are usually all you need.

Chef Charles' Secret to Better Corn on the Cob

Don't boil great sweet corn in a pot full of water.

Fresh corn already contains plenty of natural moisture.

Waterless Cooking takes advantage of that moisture, gently steaming the corn inside sealed cookware rather than submerging the ears in boiling water.

This simple method helps preserve the natural sweetness, tender texture and fresh-picked flavor that make Silver Queen Corn so special.

When the corn is this good, why water down the flavor?

What Is Silver Queen Corn?

Silver Queen is a classic white sweet corn variety known for its pale, creamy-white kernels and sweet, tender flavor.

Unlike traditional yellow corn or many modern yellow-and-white bi-color varieties, Silver Queen is prized for its distinctive white appearance and delicate sweetness.

Its beautiful white kernels also make it instantly recognizable on the dinner table.

Why Silver Queen Corn and New Jersey Are a Perfect Summer Combination

New Jersey has long been known for outstanding locally grown produce, and fresh sweet corn is one of the state's signature summer foods.

Throughout the summer corn season, freshly harvested sweet corn can be found at New Jersey farm stands, farmers markets and local produce stores.

If you can find freshly picked Silver Queen Corn or another high-quality white sweet corn grown in New Jersey, cook it as soon as possible after purchasing.

Freshness matters.

The natural sugars in sweet corn gradually change after harvest, so freshly picked corn generally delivers the best sweetness, texture and flavor.

How to Choose Fresh Silver Queen Corn

For the best Waterless Corn on the Cob, look for ears with:

  • Bright, fresh green husks
  • Plump, creamy-white kernels
  • Firm, well-filled ears
  • Fresh-looking silk
  • Kernels that appear tender rather than dry or shriveled

Avoid peeling back the entire husk at the store or farm stand if you don't need to. The husk naturally protects the kernels and helps retain moisture.

How Long Do You Cook Silver Queen Corn?

Using the Health Craft Waterless Cooking method, fresh Silver Queen Corn generally cooks for approximately 15–20 minutes after the cookware reaches cooking temperature and the Ultra-Seal® forms.

The exact cooking time can vary depending on the size and freshness of the ears and how much corn is being prepared.

Do You Have to Boil Silver Queen Corn?

No.

Silver Queen Corn does not need to be submerged in boiling water.

Waterless Cooking gently cooks fresh corn using its natural moisture and a small amount of additional moisture trapped inside sealed cookware.

Can You Cook Corn on the Cob Without Water?

Fresh corn contains a substantial amount of natural moisture, but for this Health Craft method we recommend rinsing the corn with filtered water and leaving that moisture on the corn and husks before cooking.

This provides the additional moisture needed to create steam while using dramatically less water than traditional boiling.

If the cookware becomes too dry or the corn requires additional cooking, add approximately 2 tablespoons of water and reseal the cookware.

What Is the Best Way to Cook Fresh Silver Queen Corn?

When Silver Queen Corn is exceptionally fresh, simplicity is best.

The goal isn't to cover its flavor with seasonings. It's to cook the corn until the kernels are tender while preserving as much of its naturally sweet, fresh-picked character as possible.

That's exactly why Waterless Cooking and fresh Silver Queen Corn work so well together.
