Roasted Rice Powder is an aromatic used to intensify flavor as well as to thicken a sauce of the Thai and Lao cuisine. It is also used to dust salads and other dishes. Rice powder is a healthy alternative to monosodium glutamate.
Heat a 9-inch gourmet skillet or 1.7-Qt. Skillet over medium-heat 275ᵒF. Add ½ to ¾ cup raw rice and stir as rice heats. After a few minutes it will have a lightly roasted aroma and will begin to turn pale brown. Continue stirring until all rice kernels are slightly browned. Remove from heat and place in blender and grind to a fine powder. Placed in a sealed glass jar and it will remain fresh for several months.
