Unlike traditional European fruit pies, peach cobbler is an American original. During the late 1700s and early 1800s, pioneers traveling west often lacked brick ovens and pie pans. Instead, they baked fresh fruit in cast-iron Dutch ovens over open campfires, topping it with a simple biscuit dough. The rough, uneven crust resembled a cobblestone street, giving the dessert its name.

  • 2 tbsp cornstarch
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • Pinch of kosher salt
  • 2 tbsp butter

Cobbler Topping

  • 2 cups all-purpose flour
  • ⅓ cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon
  • ½ cup cold butter, cubed
  • ¾ cup buttermilk
  • 1 tsp vanilla extract

Directions

  1. Preheat oven to 375°F.
  2. In a mixing bowl, toss peaches with both sugars, cornstarch, lemon juice, vanilla, almond extract, cinnamon, nutmeg, and salt. Transfer to a buttered 13-inch casserole (Karahi | Kadai pan) and dot with butter. Bake for 15 minutes.
  3. In a bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon. Cut in the cold butter until crumbly. Stir in the buttermilk and vanilla just until combined.
  4. Spoon the dough over the warm peaches, leaving a few openings for the fruit to bubble through.
  5. Brush with melted butter and sprinkle lightly with coarse sugar.
  6. Bake 30–40 minutes, or until the topping is golden brown and the peach filling is bubbling.
  7. Let cool for 15 minutes before serving.
