Prep: 25 Minutes Cook: 30–35 Minutes Total: Approximately 1 Hour Yield: 10–12 Mummies Serves: 5–6

Ingredients for Italian Sausage Mummies

  • 1 pound mild or sweet Italian sausage links (approximately 5–6 links)
  • 1 sheet frozen puff pastry (8–9 ounces), thawed
  • 1 large egg
  • 1 tablespoon water
  • 1 tablespoon freshly grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon freshly ground black pepper
  • 20–24 small edible candy eyes, or yellow mustard and black olive pieces
  • Fresh parsley for garnish

Ingredients for Blood-Red Marinara Dipping Sauce

  • 2 teaspoons extra-virgin olive oil
  • 2 cloves garlic, finely minced
  • 1 cup tomato sauce
  • 1½ tablespoons tomato paste
  • 2 tablespoons finely crushed tomatoes
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon sugar (optional)
  • ⅛ teaspoon crushed red pepper flakes (optional)
  • ¼ teaspoon kosher salt, or to taste
  • ⅛ teaspoon freshly ground black pepper

How to Make Halloween Italian Sausage Mummies

Step 1 — Cook the Italian Sausage

  1. Place the Italian sausage links in a Health Craft stainless steel skillet.
  2. Add approximately ¼ cup water and cover.
  3. Cook over medium-low heat, turning occasionally, until the internal temperature reaches 160°F for pork sausage.
  4. Remove from the skillet and cool for approximately 10 minutes.
  5. Cut each sausage link in half crosswise, making approximately 10–12 mummy-sized pieces.
Chef Knight's Tip: Cooking the sausage before wrapping prevents excess grease and moisture from making the puff pastry soggy.

Step 2 — Wrap the Mummies

  1. Preheat the oven to 400°F (204°C).
  2. Line a Health Craft stainless steel baking sheet with parchment paper.
  3. Unfold the thawed puff pastry on a lightly floured surface.
  4. Cut into strips approximately ¼ inch wide.
  5. Wrap each sausage piece with overlapping pastry strips to resemble mummy bandages.
  6. Leave a small opening near one end for the mummy's eyes.
  7. Place seam-side down on the baking sheet, approximately 1 inch apart.

Step 3 — Season and Bake

  1. Beat the egg with 1 tablespoon water.
  2. Lightly brush the pastry with egg wash.
  3. Combine Parmesan cheese, Italian seasoning, garlic powder, and black pepper.
  4. Sprinkle the seasoning mixture over the pastry.
  5. Bake for 20–25 minutes until the pastry is puffed, crisp, and golden brown.
  6. Cool for approximately 5 minutes.
  7. Add two edible eyes to each mummy, securing with a tiny dot of mustard if necessary.

Step 4 — Prepare the Marinara

  1. Heat olive oil in a small Health Craft stainless steel saucepan over medium-low heat.
  2. Add minced garlic and cook for approximately 30 seconds until fragrant.
  3. Stir in tomato sauce, tomato paste, and crushed tomatoes.
  4. Add oregano, basil, garlic powder, onion powder, optional sugar, red pepper flakes, salt, and black pepper.
  5. Simmer uncovered over low heat for 10–12 minutes, stirring occasionally.
  6. For a smooth blood-red appearance, briefly blend with an immersion blender.
  7. Keep warm until serving.
Count Snackular's Secret: Tomato paste gives this dipping sauce its thick, dramatic blood-red appearance. Add another teaspoon for a darker, richer color without artificial coloring.

A Killer Halloween Presentation

Step 5 — Serve the Mummies

Arrange the golden-brown Italian Sausage Mummies on a polished stainless steel serving tray or baking sheet.

Place a small bowl of warm blood-red marinara sauce in the center. Add decorative streaks of marinara around the bowl for a spooky Halloween presentation.

Garnish with fresh parsley and serve immediately.

Count Snackular's Halloween Cooking Tips

  • Sweet Italian sausage: Perfect for a mild, family-friendly Halloween appetizer.
  • Hot Italian sausage: An excellent choice for guests who prefer extra heat.
  • Keep pastry cold: Cold puff pastry produces the flakiest mummy bandages.
  • Don't wrap too tightly: Puff pastry expands during baking.
  • Make ahead: Cook the sausage and marinara one day ahead. Refrigerate separately, then wrap and bake shortly before serving.
