Creamy Cucumber Salad: Origin, History & Recipe

Creamy Cucumber Salad is one of the world's classic summer side dishes. Cool, crisp, and refreshing, it has been enjoyed for centuries throughout Northern and Eastern Europe before becoming a staple at American family gatherings, church suppers, and backyard cookouts.

The History of Creamy Cucumber Salad

The roots of creamy cucumber salad trace back to Central and Eastern Europe, especially Germany, Poland, Austria, and Hungary.

In Germany, the dish is known as Gurkensalat, meaning "cucumber salad." Depending on the region, it is served with either a light vinegar dressing or a rich sour cream dressing flavored with fresh dill and onions. During the summer harvest, families gathered cucumbers directly from the garden and prepared this salad to accompany roasted meats, schnitzel, potatoes, and fresh bread.

As European immigrants settled throughout the American Midwest during the 1800s, they brought these treasured family recipes with them. The creamy version quickly became especially popular in states such as Wisconsin, Minnesota, Iowa, and the Dakotas, where cucumbers flourished in backyard gardens.

Today, Creamy Cucumber Salad remains a favorite for:

  • Summer picnics
  • Barbecues
  • Family reunions
  • Church dinners
  • Fourth of July celebrations
  • Potlucks
  • Healthy everyday meals

Its popularity continues because it is inexpensive, refreshing, and complements almost any grilled entrée.

Creamy Cucumber Salad

Serves: 6–8

Ingredients

  • 2 large English cucumbers, thinly sliced
  • ½ medium sweet onion, very thinly sliced
  • 1 cup sour cream
  • 2 tablespoons mayonnaise
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh chives, chopped (optional)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar or honey
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 1 clove garlic, finely minced
  • Paprika for garnish

Directions

  1. Slice the cucumbers very thin. If using garden cucumbers with thick skins or large seeds, peel and seed them first.
  2. Sprinkle lightly with salt and let stand for 20–30 minutes.
  3. Drain well and gently pat dry with paper towels.
  4. In a bowl, whisk together the sour cream, mayonnaise, vinegar, sugar, garlic, dill, chives, salt, and pepper.
  5. Fold the cucumbers and onions into the dressing until evenly coated.
  6. Refrigerate for at least one hour to allow the flavors to blend.
  7. Garnish with fresh dill and a light sprinkle of paprika before serving.

Chef Charles Knight's Health Craft Tip

Preparing this salad is simple with a sharp stainless steel knife and a quality cutting board. Chilling the salad for at least one hour allows the cucumbers to absorb the creamy dill dressing while remaining crisp. For the best flavor, use fresh garden cucumbers and fresh dill whenever possible.

Delicious Variations

  • Add sliced radishes for extra crunch.
  • Mix in halved cherry tomatoes for color.
  • Substitute plain Greek yogurt for half the sour cream to increase protein.
  • Add crumbled feta cheese for a Mediterranean twist.
  • Finish with freshly cracked black pepper and extra dill.

Perfect Pairings

Creamy Cucumber Salad pairs beautifully with:

  • Grilled steaks
  • Hamburgers
  • Barbecue chicken
  • Fried chicken
  • Smoked brisket
  • Grilled salmon
  • Pork chops
  • Waterless new potatoes
  • Fresh sweet corn on the cob

Its cool, creamy flavor provides the perfect contrast to hot grilled foods, making it one of summer's most enduring side dishes.
