  • 2 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp fine sea salt

  • 1 tsp espresso powder (enhances chocolate flavor, optional but recommended)

Wet Ingredients

  • 1 cup (240ml) whole milk

  • ½ cup (120ml) neutral oil (avocado or light olive oil)

  • 2 large eggs, room temperature

  • 2 tsp pure vanilla extract

  • 1 cup (240ml) boiling water or hot coffee

👨🍳 Instructions

  1. Preheat oven to 350°F (175°C).
    Prepare two 9-inch round pans (line with parchment, lightly grease).

  2. Mix dry ingredients.
    In a large bowl, whisk flour, sugar, cocoa, baking soda, baking powder, salt, and espresso powder.

  3. Add wet ingredients (except hot liquid).
    Mix milk, oil, eggs, and vanilla into dry ingredients until smooth.

  4. Add boiling water or hot coffee.
    Slowly stir in — batter will be thin. This is correct.

  5. Bake 30–35 minutes or until toothpick comes out clean.
