STEAMED BLUE CRABS
A Chesapeake Classic Made Easy with Ultra-Core Cookware
EQUIPMENT
Ultra-Core Stockpot:
• 12 Qt (1 dozen crabs)
• 18 Qt (2 dozen crabs)
• 26 Qt (3+ dozen crabs)
Extra-Large Culinary Basket
INGREDIENTS
2 bottles or cans of Dogfish, Blue Moon, or Budweiser (½ bottle for the cook)
1 cup apple cider vinegar
½ cup Old Bay or seafood seasoning, divided
1 dozen live blue crabs
1 tablespoon kosher salt
DIRECTIONS

Prepare the steaming liquid.
Pour the beer and apple cider vinegar into the stockpot. Add ¼ cup Old Bay and the kosher salt. Stir to combine. -
Add the crabs.
Place the Culinary Basket into the pot and add the live crabs. -
Begin steaming.
Cover the pot. Open the Ultra-Temp Control and Whistle Vent. Set heat to medium (275°F).
When steam escapes and the whistle sounds, reduce to low (200°F) and close the vent.NOTE: The alcohol vapor gently relaxes the crabs, putting them to sleep so the meat stays tender.

Cook to perfection.
Steam until the shells turn bright orange and no blue/green color remains, about 20–30 minutes.
TO SERVE
Cover your table with newspaper or brown paper bags.
Lift the Culinary Basket from the stockpot and spread the crabs across the table.
Sprinkle with the remaining ¼ cup seafood seasoning.
Enjoy with cold beer, melted butter, and good company.
