Ingredients
Pie Crust
- 1 deep-dish pie crust (homemade or refrigerated), fitted into an 11-inch pie pan
Protein (Choose One or Both)
- 10 ounces crispy bacon, cooked and crumbled
- 10 ounces maple breakfast sausage, browned and drained
- 5 ounces bacon + 5 ounces maple breakfast sausage (Chef Charles Knight's Favorite)
The combination delivers the perfect balance of smoky, savory bacon and the subtle sweetness of maple sausage for an unforgettable quiche.
Filling
- 1 medium sweet onion, finely diced
- 2 tablespoons butter
- 2 cups Gruyère cheese, freshly shredded
- 1 cup Swiss cheese, freshly shredded
Custard
- 6 large eggs
- 2 cups heavy cream
- ½ cup whole milk
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon white pepper
- Pinch of freshly grated nutmeg
- 1 tablespoon chopped fresh chives
- 1 teaspoon fresh thyme leaves
Instructions
Prepare the Crust
Preheat oven to 375°F.
Fit the crust into your Health Craft 11-inch Deep Stainless Steel Pie Pan. Crimp the edges and prick the bottom with a fork.
Line with parchment paper and pie weights.
Blind bake for 12 minutes, remove the weights, then bake another 5 minutes until lightly golden.
Allow to cool slightly.
Prepare the Filling
Cook your bacon, sausage, or both until browned and fully cooked.
Drain well.
Melt the butter and sauté the onions over medium heat until soft and lightly caramelized, about 8–10 minutes.
Allow to cool.
Make the Custard
In a large bowl, whisk together:
- Eggs
- Heavy cream
- Milk
- Salt
- Black pepper
- White pepper
- Nutmeg
- Chives
- Thyme
Whisk until smooth and well combined.
Assemble
Evenly layer into the crust:
- Gruyère cheese
- Swiss cheese
- Bacon, sausage, or both
- Sautéed onions
Slowly pour the custard over the filling.
