Ingredients
- 3 each Red, Russet, and Yukon Gold potatoes (8–10 total), cooked the waterless way
- ½ tsp celery salt
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ cup mayonnaise (room temperature)
- ½ cup sour cream (room temperature)
- ½ tsp apple cider vinegar or white distilled vinegar
- Dash of sugar
- 1 egg yolk, beaten (optional)
- Unsalted butter, for topping
- 2 Tbsp fresh chopped chives
Directions
1. Prepare the potatoes
- Scrub potatoes under cold running water with a vegetable brush.
- Remove any surface blemishes with a paring knife, but do not peel.
- Cut potatoes into quarters.
2. Waterless cooking method
- Place the potatoes in a waterless cooking pan, rinse with cold water, and drain. The water clinging to the potatoes is sufficient for cooking.
- Cover the pan, open the vent, and place over medium heat (275°F).
- When steam escapes or the whistle sounds (3–5 minutes), close the vent and reduce the heat to medium-low (200°F).
- Cook for 25–30 minutes without peeking. Removing the cover breaks the vapor seal, lengthens cooking time, and may cause scorching.
3. Mash and mix
- When done, pour off any excess moisture.
- Using a potato masher, mash the potatoes directly in the pan.
- Stir in the beaten egg yolk (if using), then add mayonnaise, sour cream, vinegar, seasonings, and sugar.
- Mash to desired texture, leaving them rustic or smooth to taste.
4. Serve hot
- Transfer to a serving bowl.
