Ingredients

Sponge Cake

  • 4 large eggs, room temperature
  • ¾ cup granulated sugar
  • 1 tsp pure vanilla extract
  • ¾ cup cake flour (sifted)
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp whole milk
  • 2 tbsp melted unsalted butter

Filling

  • ¾ cup high-quality seedless raspberry or strawberry jam
    (Warm slightly so it spreads easily.)

  • Powdered sugar for dusting

Instructions

1️⃣ Prepare the Pan (Critical for Success)

  • Preheat oven to 375°F (190°C)
  • Line a 16x12-inch jelly roll pan with parchment paper
  • Lightly grease parchment
  • Dust a clean kitchen towel generously with powdered sugar

2️⃣ Make the Sponge Cake

  1. Beat eggs and sugar on high for 5–7 minutes until pale, thick, and tripled in volume.
