Ingredients
Sponge Cake
- 4 large eggs, room temperature
- ¾ cup granulated sugar
- 1 tsp pure vanilla extract
- ¾ cup cake flour (sifted)
- 1 tsp baking powder
- ¼ tsp salt
- 2 tbsp whole milk
- 2 tbsp melted unsalted butter
Filling

¾ cup high-quality seedless raspberry or strawberry jam
(Warm slightly so it spreads easily.)

Instructions
1️⃣ Prepare the Pan (Critical for Success)
- Preheat oven to 375°F (190°C)
- Line a 16x12-inch jelly roll pan with parchment paper
- Lightly grease parchment
- Dust a clean kitchen towel generously with powdered sugar
2️⃣ Make the Sponge Cake
- Beat eggs and sugar on high for 5–7 minutes until pale, thick, and tripled in volume.
(It should fall in ribbons.) - Mix in vanilla.
- Sift flour, baking powder, and salt together.
- Gently fold dry ingredients into egg mixture — do NOT deflate.
- Warm milk and melted butter together and fold in carefully.
3️⃣ Bake
- Spread batter evenly in pan.
- Tap lightly to release air bubbles.
- Bake 9–11 minutes until center springs back lightly.

4️⃣ Roll While Warm (The Secret)
- Immediately invert cake onto prepared sugared towel.
- Carefully peel off parchment.
- Roll cake up with the towel inside starting from the short end.
- Cool completely rolled (about 1 hour).

- Gently unroll cooled cake.
- Spread thin, even layer of jam (leave ½ inch border).
- Re-roll without towel.
- Chill 30–60 minutes to set.
