Temperature Guidelines
- Low (150°F / 65°C): Tenderizing meat, sous-vide vegetables, long slow-cooking (beans, grains, stews, steaming)
- 155°F (68°C): Food safety – bacteria destroyed, pasteurizing
- 170–190°F (77–88°C): BBQ, dips, Sloppy Joes, soft-boiled eggs
- 175°F (79°C): Simmer – stocks, soups, chili, chowder, fondue
- 180–200°F (80–95°C): Poaching, sauces, braising, roasting after browning, vapor-seal waterless cooking
- 210–230°F (99–110°C): Baking (custards, casseroles, eggs, jellies, jams, candy)
- 230–250°F (110–121°C): Eggs, pre-heat for baking
- 275–300°F (135–150°C): Steaming, sautéing, roux, baking cakes, cornbread, brownies
- 350°F (175°C): Fish, seafood, grilled sandwiches
- 375–400°F (191–205°C): Stir-fry, deep-fry, pancakes, pasta boiling, crepes, pan-broiling
- 425–450°F (218–232°C): Boiling, browning, searing meats
Baking with the Digital Probe
- Follow ingredient & mixing directions on the box (replace oil with pineapple juice for cakes if desired).
- Coat pan with unsalted butter, cooking spray, or parchment.
- Preheat covered skillet to 250°F (120°C).
- Add batter, cover, and raise to 300°F (150°C).
- Set timer according to package (9-inch pan setting).
- When timer completes, unit turns OFF automatically.
- Cool, loosen edges with knife, invert to remove.
⚠️ When removing lid, turn upside down immediately to prevent condensation dripping on baked goods.

Operating Instructions
- Insert control into appliance → plug into outlet. Red light will appear.
- TEMP Button: Turns unit ON (flashes 150°F).
- OFF Button: Turns unit OFF.
- F / C Conversion: Turn unit ON → press TEMP + TIME together.
- UP / DOWN Arrows: Adjust in 5°F (or 1°C) steps; hold for faster 25°F (10°C) jumps.
- Signal Light: Blinks during heating, steady at target temp, cycles to maintain accuracy.
- Timer Button: Press TIME → set up to 12 hours. Unit runs until time expires or OFF is pressed.
Special Function – Rice Cooking
This unit includes two automatic rice programs:

RIC1: Low setting for 1–3 cups (shorter cook time)

RIC2: High setting for 4–5 cups (longer cook time)
When complete, unit automatically shifts to KEEP WARM (150°F / 65°C).
