SAUERKRAUT Recipe

With just a few simple steps, you can create a delicious and probiotic-rich food that promotes gut health and enhances your overall well-being.

PREPARATION: 15 minutes and 1 month – makes 8 to 12 servings depending on use

EQUIPMENT: Rotary Mandolin Food Cutter and Cutting Cone #4, Ultra-Vac food storage 1650ml to 200ml container with vacuum lid, vacuum pump

INGREDIENTS:

  • ·       2-pound head of cabbage
  • ·       2 tablespoons Kosher Salt

·       NOTE: Rule of thumb, 1 tablespoon salt to 1 pound of cabbage. The average head of cabbage weighs about 2¼ pounds.

DIRECTIONS:

Start by using the food cutter along with cutting cone #4 to shred your cabbage into the Ultra-Vac container. This efficient tool not only ensures uniform cuts but also saves you time in the kitchen. After shredding, crush the cabbage by hand and sprinkle it with salt to enhance the fermentation process. Once you've mixed it well, simply place the vac cover on the container and vacuum out the air. This crucial step creates the perfect environment for fermentation, which you can then allow to develop in a dark location for 3 weeks to 1 month.

ALTERNATIVE WATERLESS METHOD. Place the finely chopped cabbage into a 3-quart saucepot and set it over medium heat with the vent open. As the steam begins to escape or the whistle sounds, promptly close the vent and turn off the heat. Allow the cabbage to sit for about 30 minutes; this resting period is crucial as it allows the natural moisture from the cabbage to create a steam environment that cooks the vegetables evenly.

Once your cabbage has finished cooking, mix in the salt. Next, transfer the seasoned cabbage into our Ultra-Vac container. Cover the container and vacuum out the air. This airtight seal will significantly shorten the fermentation time to just two weeks, making it a quick and efficient method to enjoy delicious, healthy fermented foods. Store in a dark location for about 2 weeks.
