If you've ever wondered if sweet potatoes and yams are the same thing, you're not alone. While these two tubers are often used interchangeably, they are actually different plants with distinct characteristics.

Firstly, sweet potatoes are native to South America and are generally tapered at both ends with smooth skin that can range from brown to orange. They have sweet, moist flesh that ranges from light yellow to orange. On the other hand, yams are native to Africa and Asia and have rough, scaly skin that is often darker in color. They have a drier, starchier flesh that is usually white or purple.

Furthermore, in the United States, the terms sweet potato and yam are often used interchangeably, which can add to the confusion. In reality, most of the products labeled as yams in American grocery stores are actually sweet potatoes.

It's important to note that both sweet potatoes and yams are nutritious and versatile ingredients that can be used in a wide variety of dishes. Whether you're roasting them, mashing them, or using them in a sweet or savory recipe, knowing the difference between these two tubers can help you choose the right ingredient for your needs.

PREPARATION: 30 minutes – makes 4 servings

EQUIPMENT: Small Skillet with Vented Lid and Food Cutter.

INGREDIENTS:

  • 4 slices of bacon, diced.
  • 2 strips of bacon whole.
  • 4 sweet potatoes
  • ¼ cup maple syrup
  • ¼ cup chopped walnuts (optional)

DIRECTIONS:

Preheat the skillet over medium heat 275ᵒF and sauté bacon until crisp.

While the bacon is cooking cut the sweet potatoes on the #2 or #5 cutting cone or cut them into cubes with a chef’s knife.

Remove the 2 strips of bacon and set aside for topping.

Add the cut sweet potatoes to the skillet cover and open the whistle vent. When the whistle sounds or steam begins to escape from the vent close the vent and reduce the heat to low 200ᵒF and cook until tender, about 20 minutes.

Uncover and add the maple syrup. Stir to combine. Cover the skillet and cook with the vent closed for about 5 minutes.

SERVING:

Top with crumbled bacon and chopped walnuts and serve hot.
