- 2 cups heavy cream

- 3 cloves garlic, minced
- 1 small onion, finely diced
- 2 cups sharp cheddar cheese, shredded
- 1 cup Gruyère cheese, shredded
- 2 tbsp all-purpose flour
- 1 tsp sea salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- 1 tsp fresh thyme (or ½ tsp dried)
👨🍳 Instructions
1. Prep the Base
Preheat oven to 375°F (190°C). Butter a 9x13 baking dish.
2. Build the Cream Sauce
In a saucepan, melt butter over medium heat.
Add onions and cook until soft (about 4–5 minutes).
Stir in garlic and cook for 1 minute.
Sprinkle in flour and whisk for 1–2 minutes to form a roux.
Slowly add cream and milk, whisking constantly until smooth.
Season with salt, pepper, paprika, and thyme. Simmer until slightly thickened.
3. Layer Like a Pro
Arrange a layer of potatoes in the baking dish.
Pour some sauce over, then sprinkle cheese.
Repeat layers until all ingredients are used, finishing with cheese on top.
4. Bake to Perfection
Cover with foil and bake for 45 minutes.
Remove foil and bake another 25–30 minutes until golden and bubbly.
5. Rest & Serve
