EQUIPMENT: large skillet, medium stainless steel mixing bowl,

INGREDIENTS:

  • 24 strips of bacon, cut in half.
  • 1 can whole water chestnut
  • ½ cup Chardonnay wine, or other white wine
  • 1 cup ketchup
  • 1 cup honey
  • 24 toothpicks

DIRECTIONS:

Wrap each whole water chestnut with a half slice of bacon slice and secure with a toothpick.

Preheat the skillet over medium heat to 275°F. When heated, place bacon-wrapped water chestnuts in the pan, cover with the vent open, and after about 5-7 minutes turn. Repeat the process until the bacon is cooked to desired crispness on all sides.

While the bacon and chestnuts are cooking, in the mixing bowl combine ketchup and honey and set aside.

After the bacon chestnuts are crisped remove from the pan and set aside. Pour off the excess grease and place back on the burner over medium heat 275ᵒF. Deglaze the skillet with wine and allow the alcohol to burn off for about 1 to 2 m minutes.

Reduce the heat to low 200ᵒF and place the bacon wrapped chestnuts back in the skillet.

Pour the ketchup/honey mixture over the bacon wrapped chestnuts evenly, cover and continue cooking on Low heat 200°F (110°C), about 5 minutes, turning occasionally to glaze.

To Serve: Remove to large serving platter, garnish with parsley and sliced orange.
