  • 1 medium potato, diced

  • 1 bay leaf

  • If using canned: rinse and set aside

Step 2: Build the Flavor Base

  • Preheat your pot on medium (~275°F)
  • Add onions, garlic, carrots, celery
  • Cover and let natural moisture release (no oil needed)
  • Stir occasionally until aromatic (15–20 minutes)

Step 3: Layer the Soup

  • Add:
    • potatoes
    • tomatoes
    • broth
    • spices & bay leaf
  • Bring to a gentle simmer

Step 4: Cook

  • Add garbanzo beans
  • Reduce heat to low (175–200°F)
  • Cover and cook:
    • Dried beans: 60–90 minutes
    • Canned beans: 30–40 minutes

Step 5: Finish

  • Add greens (optional)
  • Adjust flavor with chicken base
  • Remove bay leaf
  • Hot sauce to taste
