From the Yankee Peddler’s Wagon to the Television Kitchen—and the Remarkable Evolution of Waterless Cooking

Long before there was a shopping mall, a television commercial, a home shopping network, or a website with a BUY NOW button, Americans were buying cookware from a salesman who brought the store right to their front door.
He was the Yankee Peddler.
You could hear him coming.
A horse-drawn wagon rattling along a dirt road, loaded with household goods—tools, clocks, fabrics, kitchen utensils, tinware, pots and pans.
For a family living miles from town, his arrival was more than a shopping opportunity.
It was an event.
The Yankee Peddler brought merchandise, but he also brought news, conversation, stories and showmanship.
Most importantly, he understood one of the oldest principles in selling:
Don't just tell people what a product can do. Show them.
That principle would survive for generations.
The horse would disappear.
The wagon would disappear.
The dirt road would disappear.
But the cookware demonstration would live on.
And more than two centuries later, it would become my life's work.
A POT, A PAN—AND AN IDEA
America's early kitchens were practical places.
Cookware had one basic job: survive the fire and cook the food.
Cast iron did that remarkably well.
But as America industrialized, cookware began to change.
Manufacturers experimented with new metals, new manufacturing techniques and new ways of controlling heat.
Aluminum became important because of its excellent heat conductivity.
Stainless steel offered durability, corrosion resistance and an attractive cooking surface.
Then manufacturers began combining metals.
That was a turning point.
A pot was no longer simply a piece of metal formed into the shape of a pan.
It could be engineered.
And from that engineering emerged a category of cookware that would become the foundation of my career:
Waterless Cookware.
WHAT DOES “WATERLESS” REALLY MEAN?
The name has always generated questions.
Does waterless cookware really cook without water?
Not exactly.
The better description is cooking without adding unnecessary water.
Fresh vegetables already contain a remarkable amount of natural moisture.
The waterless method takes advantage of it.
Wash your vegetables.
Place them in the pan.
Pour off the excess water.
Cover the pan and begin cooking over medium heat.
As the food heats, its natural moisture begins turning to vapor. With properly designed cookware and a close-fitting cover, moisture condenses around the cover and rim, helping establish a vapor seal.
At the proper point, reduce the heat to low.
Now the food cooks gently in its own natural moisture.
Instead of boiling vegetables in a pot full of water and pouring the cooking liquid down the drain, you're using the moisture that was already there.
Simple?
Absolutely.
But seeing it demonstrated for the first time could completely change the way someone thought about cooking vegetables.
And that is exactly why waterless cookware became such a natural product for demonstration selling.
WHY THE DEMONSTRATION MATTERED
Imagine trying to explain all of that with a little card sitting next to a saucepan on a department-store shelf.
You could do it.
But there's a better way.
Cook a dinner.
Put fresh vegetables in the pan.
Don't cover them with water.
Prepare meat without automatically pouring oil into the skillet.
Control the temperature.
Remove the cover.
Let the customer see the color of the vegetables.
Let them smell the food.
Then put a fork in their hand.
Let them taste it.
Suddenly you're no longer selling a pot.
You're demonstrating an idea.
That distinction became the foundation of the waterless cookware industry—and eventually the foundation of my own career.
THE SCIENCE WAS IN THE METAL
As waterless cooking evolved, so did the cookware.
The challenge was heat.
Aluminum conducts heat extremely well, but consumers increasingly wanted the durability and cooking characteristics of stainless steel.
Stainless steel, however, doesn't distribute heat nearly as efficiently as aluminum.
The solution was ingenious:
Why choose one metal when you can combine the advantages of several?
Manufacturers began bonding layers of different metals together.
Stainless steel could provide a durable cooking surface.
Aluminum could provide rapid heat transfer and distribution.
Additional layers could provide strength, durability and specialized performance.
Cookware evolved from single-metal construction into multi-ply engineering.
Five-ply.
Seven-ply.
And eventually even more sophisticated constructions.
But the number of layers was never the real story.
The real question was—and remains:
Are the right metals being used in the right places, at the right thicknesses, for the right purpose?
That's what determines how cookware performs.
COOKWARE THROUGH THE GENERATIONS
The progression didn't happen overnight.
Early 1900s — Aluminum Comes of Age
Heavy aluminum cookware gained popularity because it transferred heat efficiently and could be manufactured into substantial pots and pans.
1930s and 1940s — Stainless Steel Enters the Kitchen
Stainless steel offered something different: durability, corrosion resistance and an attractive cooking surface.
Its comparatively poor heat conductivity, however, created an engineering challenge.
World War II — The Kitchen Meets the War Effort
During World War II, metals including aluminum and steel became strategically important. Civilian manufacturing was restricted and factories across America were redirected toward wartime production.
Postwar America — The Consumer Boom
When the war ended, American manufacturing roared back.
Cookware manufacturers returned to the consumer market, and American families were ready for modern kitchens and modern products.
1950s and 1960s — The Multi-Ply Era
Manufacturers increasingly combined stainless steel with heat-conducting metals, creating cookware capable of providing both durability and improved heat distribution.
Waterless cookware became increasingly sophisticated.
And the home cooking demonstration became part of American direct-selling culture.
Then came the decade that changed my life.
1970 — MY JOURNEY BEGINS
In 1970, I founded Health Craft Cookware.
I entered the cookware business believing I was going to sell pots and pans.
I soon discovered I was doing something much more interesting.

I was teaching people how to cook.
There is a tremendous difference.
Anyone can point to a piece of cookware and tell you it's wonderful.
A cooking demonstration makes you prove it.
I had to understand heat.
I had to understand the cookware.
I had to understand the food.
And most importantly, I had to be able to explain all three to someone who might never have heard the words waterless cooking before I walked through the door.
That education took place one family at a time.
One kitchen at a time.
One meal at a time.
And somewhere along the way, the cookware salesman became a chef.
THE SALESMAN BECOMES THE TEACHER
Cooking became my classroom.
I learned that the most successful demonstration wasn't necessarily the one where I talked the most.
It was the one where the customer suddenly said:
“I didn't know you could cook that way.”
That's the moment everything changes.
You're no longer selling.
You're teaching.
Over the years, that philosophy carried me from individual cooking demonstrations to home shows, seminars, radio and eventually television.
I became a cookbook author and cooking educator.
And ultimately, I would make more than 250 television appearances, bringing the cooking demonstration to audiences that could never have fit around my kitchen table.
I had the privilege of working alongside talented culinary personalities, including Chef Tell Erhardt, and experienced firsthand another transformation in American cookware history.
The cookware demonstration had moved from the home...
to television.
THE YANKEE PEDDLER WOULD HAVE UNDERSTOOD TELEVISION
I sometimes wonder what one of those early Yankee Peddlers would have thought if you had shown him a television cooking program.
He probably would have understood it immediately.
Different technology.
Same idea.
Get people's attention.
Show them something interesting.
Demonstrate the product.
Tell a story.
Answer the question everyone is thinking: “Why should I care?”
And above all:
Never bore your audience.
The Yankee Peddler had his wagon.
We had television cameras.
Today we have smartphones and social media.
The technology keeps changing.
Human nature doesn't.
THEN INDUCTION CHANGED THE PAN AGAIN
For centuries, cookware sat over fire.
Then came gas.
Then electric.
Then smooth-top cooking surfaces.
And eventually:
Induction.
Induction changed cookware engineering because the cooking surface doesn't simply heat a burner that then heats the pan.
An electromagnetic field interacts with compatible magnetic material in the cookware.
That meant the modern cookware manufacturer needed to think about yet another characteristic:
Magnetic compatibility.
Now multi-ply construction could be engineered to combine several functions within a single piece of cookware.
A high-quality 316Ti stainless-steel interior for the cooking surface.
Highly conductive internal layers to distribute heat.
A magnetic 439 stainless-steel exterior for induction compatibility.
Precision covers and vapor-control designs for waterless cooking.
The humble cooking pot had become a remarkably sophisticated piece of engineering.
FROM HORSEPOWER TO INTERNET SPEED
Consider the journey.
The Yankee Peddler traveled perhaps a few miles down a country road to reach his next customer.
When I started in 1970, a cookware demonstration might reach a handful of people sitting around a dining-room table.
Television allowed me to reach millions.
Today, the Internet allows a cooking demonstration produced in Florida to be seen almost instantly across America—and around the world.
We've gone from horsepower to Internet speed.
But here's what more than 50 years in this business has taught me:
Technology changes faster than people do.
People still want to know:
Will it work?
Is it worth the money?
Will my family like the food?
Is it really different from what I already own?
Those are essentially the same questions the Yankee Peddler had to answer generations ago.
And the best answer remains remarkably similar.
Let me show you.
MORE THAN HALF A CENTURY LATER
When I founded Health Craft Cookware in 1970, I couldn't have imagined where that decision would take me.
Through kitchens.
Across stages.
Into radio studios.
In front of television cameras.
Into cookbooks.
And eventually onto computer screens and smartphones.
But through all those changes, my purpose remained surprisingly consistent:
Teach people a better way to cook.
That's why I believe the history of cookware isn't merely a history of cast iron, aluminum and stainless steel.
It's a history of people teaching other people how to use them.
The Yankee Peddler brought the cookware to the customer.
The waterless cookware demonstrator brought the cooking lesson into the home.
Television brought that demonstration to millions.
The Internet took it around the world.
And I've been fortunate enough to spend more than half a century participating in that evolution.
THE POT CHANGED. THE LESSON DIDN'T.
After all these years, I keep coming back to the same principle.
If you truly believe you have a better way to cook:
Don't just tell people.
Show them.
Cook with it.
Explain what you're doing.
Teach them something they didn't know.
Let them smell the food.
Let them taste it.
Answer their questions.
Then let them make up their own minds.
From the clatter of pots and pans in a Yankee Peddler's wagon to the modern cookware demonstration appearing on a smartphone halfway around the world, more than two centuries of innovation separate those two moments.
Yet one simple idea connects them:
SHOW THEM HOW IT COOKS.
The cookware has changed.
The kitchen has changed.
America has changed.
And after more than 55 years...
