New Jersey Diner Brown Gravy over Crispy French Fries with Mozzerella
Crunchy Crinkle Cut Fries have been a New Jersey diner classic as far back as I can remember (1950’s). In the 1960’s we shared French fries smothered in brown gravy after the Saturday Nighter's dance. Then in the 1970’s Saturday Night Fever came along and we topped our Fries and Gravy with gooey Mozzarella Cheese and called it Disco-Fries. No matter how you like your fries an excellent New Jersey Diner Brown Gravy remains a favorite.
PREPARATION: 40 minutes – make 4 to 6 servings
EQUIPMENT: 2-Qt. Saucepan, whisk
INGREDIENTS:
- 3 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- ½ tablespoon Bada All-Purpose Seasoning
- ½ tablespoon garlic powder
- 32 ounces beef stock
- 1 beef-bouillon cube crushed
DIRECTIONS :
Melt butter in 2-quart saucepan over medium heat 275ᵒF. Add flour 1 tablespoon at a time whisk until combined. Continue to cook until butter flour mixture is slightly brown and smells like cookie dough 4 or 5 minutes. Whisk in Bada seasoning and garlic powder and cook about 2 minutes.
Begin to add beef stock slowly and continue to whisk until combined about 2 to 3 minutes. Whisk in crushed bouillon cube.
Reduce the heat to low 200ᵒF and continue to simmer until desired thickness. Whisk occasionally.
Serve over mashed potatoes, French fries, noodles, beef, or more.
