Sweet Spinach Blue Cheese Salad with Cranberries
PRERATION TIME: 10 minutes – Makes 4 to 6 servings
¼ cup tarragon vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
¼ cup pure golden Italian olive oil
1 6 to 8 ounce bag fresh spinach
1 cup dried cranberries
½ red onion, julienne #3 French fry cone
½ cup toasted pine nuts
2½ ounces blue cheese
2 strips bacon, cooked crisp and crumbled
In the medium mixing bowl, combine tarragon vinegar, mustard and honey. Drizzle the olive oil into the vinegar mixture and whisk to emulsify. Set aside.
In a salad bowl, combine spinach, cranberries, onion and pine nuts with salad dressing.
To serve, top with crumbled blue cheese and bacon.
