
Miso soup is a traditional Japanese soup prepared with Dashi combined with softened Miso paste and tofu. Miso soup is sometimes served with seasonal regional vegetables and/or seaweed and rice.
EQUIPMENT: 3 Qt. Saucepan
PREPARATION: 15 minutes – makes 4 servings
INGREDIENTS:
- 4 cups purified or filtered water (no tap water)
- 2 teaspoons dashi granules
- 3 tablespoons miso paste
- 8-ounce package tofu, diced
- 1 teaspoons soy sauce
- 2green onions, sliced on a bias

DIRECTIONS
In the 3 Qt. saucepan bring water to a boil over medium-high heat 375ᵒF. Add Dashi Granules and reduce the heat to medium 275ᵒF whisk to thicken. Add tofu and simmer for 2 to 3 minutes. Stir the soy sauce and half the green onions.
To serve, top with the balance of green onions.
