WARM RUM EGGNOG
- 4 egg yolks
- ¼ cup granulated sugar
- 2 cups half n half
- ¼ teaspoon vanilla extract
- 3 ounces white rum
- 1 teaspoon freshly grated nutmeg
- Cinnamon Stick
In a small mixing bowl whisk the egg yolks until light in color. Add the sugar and continue to whisk until completely dissolved. Set aside.
In the MILK PAN over medium heat add the half n half and vanilla and bring just to a simmer, stirring occasionally. Remove from the heat and gradually temper the hot mixture into the egg and sugar mixture. Then return to the MILK PAN and cook over low heat until the mixture reaches 160°F. Remove from the heat, stir in the rum, pour into mugs and top with grated nutmeg.
