Chef Charles Knight traces his culinary roots to his childhood and the home kitchens of the diverse ethnic neighborhoods of his hometown, Rahway, New Jersey. His love for cooking and recipes began with earning a Cooking Merit Badge with Cub Scout Pack 47. While still in high school, he worked in butcher shops, restaurants and industrial kitchens throughout northern New Jersey.
His most inspirational culinary studies came from working with his former business partner and TV personality, Chef Tell. Later in life, he earned a formal culinary education attending Institute of Culinary Education in New York City, and earned credits in Nutritional Cuisine from the Culinary Institute of America in Hyde Park, New York.
Chef Knight is a bestselling cookbook author, former Restaurateur, Radio and TV cooking show host, cookware designer, and is recognized worldwide as the foremost expert on the classic methods of waterless/ greaseless cooking.
